The legacy

One kitchen, two families, a century of saffron.

The Movahedis brought a copper pot out of Isfahan — unscoured, because the crust remembers, only wiped after each use. The Sarkissians brought charcoal, and the New Julfa habit of laying the table for more people than were invited. The one thing the two families have never agreed on is how long the saffron should bloom before the rice goes in — a disagreement now in its fourth generation.

Nothing here is loud. Even the fire.

Rice pressed firm into the pot, then left an hour under cloth while the base gilds low and slow. Steam first, when the lid lifts — then the flip, one motion, and the thud as the plate meets the table. What's underneath is why the dish carries its own name.

Tea, taken slowly

Every afternoon, our brass samovar comes alive. Freshly brewed dark tea served in traditional glass estekans, accompanied by saffron brittle, cardamom, and fresh pastry. A moment where urgency is forbidden.
